Pumpkin Spice Bread Recipe

makes 2 wonderful loaves

Ingredients
3 cups whole wheat flour
2 cups splenda
2 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup applesauce
3 eggs
15 oz pumpkin
Directions
  1. IN a large bowl combine the whole wheat flour, splenda, baking soda, baking powder, cinnamon, salt, and nutmeg.

  2. In a medium bowl combine the applesauce, eggs, and pumpkin.

  3. Spoon the pumpkin into the dry ingredients and stir VERY well.

  4. Spray 2 loaf pans and put half the batter into each pan.

  5. Bake at 350 for 60 minutes.

  6. Cool on wire rack for 10 minutes.

  7. Dump upside down so loaf somes out of pan and cool completely on wire rack.
