Pumpkin or Yam Muffins *Bad Version* Recipe

Ingredients
1 3/4 cups flour, sifted
3/4 tsp salt
1/2 cup sugar
2 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
1 cup pumpkin or cold, cooked mashed yams
2 eggs
2 tbs melted butter
3/4 cup milk
Directions
  1. Preheat oven to 400 degrees F.

  2. Sift flour, salt, sugar, baking soda, cinnamon and nutmeg together.

  3. In a separate bowl, beat 2 eggs.

  4. Add melted butter, milk adn pumpkin (or yams) to eggs.

  5. Combine liquid and dry ingridients but don't over mix.

  6. Fill greased muffin tins two-thirds full and bake for 20 to 25 minutes.

  7. You can add 1 cup chopped pecans and/or 2 tsp grated orange rind if you want. Add them to the milk mixture. They aren't included in the calorie count.
