Hey everyone :)  Newbie here.  Anyone have any good pumpkin/squash recipes? I just picked up a pumpkin at the store yesterday and made some awesome pumpkin smoothies... thought I'd share :)

1/2 cup of fresh (boiled or mic'd) pumpkin
1/2 cup fat-free vanilla yogurt
1/4 cup of fat-free plus milk
4-5 ice cubes
1/4 tsp of pumpkin pie spice
1/4 cup of light maple syrup (or honey or brown sugar if you prefer)

blend til' smooth and garnish with some fat free whipped cream and enjoy!

I love pumpkin and squash.. yumm ^_^
I started cooking my squash in the microwave and when done sprinkle a little salt and lite pancake syrup over it.  Yummy.
I had roasted pumpkin slices for supper last night and still have some uncooked pieces in the refrigerator.  I'm planning on making mashed, savory pumpkin - it's just pumpkin with salt and pepper and some nutmeg, pureed.  I'll have a serving with a meal and put the rest into a smooth, creamy soup.
PUMPKIN CHEESECAKE
* Low Calorie Dessert *
* Great Cooking Activity for Kids *

Makes 12 servings. Ingredients:

12 gingersnaps

2 1/2 cups part skim ricotta cheese

1 cup canned pumpkin puree

1/2 cup granulated brown sugar

2 large eggs

1/1/2 tsp vanilla

1/2 tsp ground allspice

1/2 tsp cinnamon

1/4 tsp ginger

3/4 cup frozen non-dairy whipped topping, thawed

Place one ginger snap in bottom of cupcake papers. Beat ricotta until smooth. Add remaining ingredients, except topping and mix until well combined. Pour mixture into cups.

Bake 20 minutes at 350° until lightly set; turn off heat. Let stand in oven 1 hour. Cool on rack and chill overnight. Serve with 1 tbsp topping.
This pumpkin chili is a hit in my family.  Sometimes I use the Boca meat crumbles instead of ground beef -- just stir them in after the rest of the mixture is simmering and then simmer about 10 minutes more.

That cuts down on the calories and fat, but it is soy, so if you can't do soy - gotta stick with meat...
oh gosh that pumpkin smoothie is SOOOO good... I just made one. YUM!
Pumpkin Fluff

2 cups cooked, pureed, plain pumpkin
1 small package of vanilla or butterscotch instant pudding (may be fat free sugar free or regular)
2 cups whipped topping
dash of nutmeg and cinnamon

Fold the pumpkin and pudding mix together until the pudding powder is completly incorporated.  Fold this mixture gently into the whipped topping.

Spoon into dessert dishes and refrigerate for at least 1 hour before serving.  Garnish with sprinkles of nutmeg and cinnamon.
Neat!  All of those recipes sound *really* tasty! :)
