Quesadilla Recipe?
I am making these tonight for dinner. Anyone have a good recipe or ideas? I have only had them in the resturant and they were yummy.

I made quesadillas last night -
Fillings I use are chicken, onion, mushroom, garlic and spinach (prefer fresh, but had to use frozen last night - rinse and drain it really well). I dice the filling very fine and saute it in a pan to heat throughout (i use leftover chicken)
brush the outside of the tortilla with a little butter or olive oil, sprinkle cheese on half, filling on top of that, more cheese, fold over and put in pan (medium to medium high heat).

If you don't want to use butter or oil, I spray the pan with non-fat cooking spray. The quesadillas still turn out crunchy. Kelly, I never thought about putting spinach in a quesadilla - great idea! I usually make chicken, onion and a little cheese.
If you use the La Tortilla factory tortillas they have some that are 80 calories. SOme of the other large tortillas can run alot more calories.. but I guess it depends on your preference.
Alright this is pre-CC but it is my kids favorite quesdilla from childhood. I think you can find a lot fat cheese soup to use too. Also you can purchase the precooked chicken strips in the deli meat section of your grocery store. Quick and easy is my style for fun foods like this.
Chicken Quesadillas
From: Campbell's Kitchen Prep/Cook Time: 20 minutes
Serves: 4 Ingredients:
1 lb. boneless chicken breasts, cubed
1 can Campbell's® Condensed Cheddar Cheese Soup
1/2 cup Pace® Chunky Salsa
10 flour tortillas (8'')
Directions:
PREHEAT oven to 425°F.
COOK chicken in nonstick skillet until done and juices evaporate, stirring often. Add soup and salsa and heat through.
SPREAD about 1/3 cup soup mixture on half of each tortilla to within 1/2" of edge. Moisten edge with water. Fold over and seal. Place on 2 baking sheets.
BAKE 5 min. or until hot.
TIP: Serve with Mexican-style rice .

My current favorite quesadilla if from Alcapolco's (local mexican chain here).
It is a pork carnitas one. So yummy!
If you can find pork carnitas in your grocery store you have to try it. You know the section where they have premade meats from Hormel and such, you may find it there.
To build place a tortilla on a baking sheet and layer carnitas you have heated through on top. Sprinkle with lot fact cheese (a nice whte cheese, mozzerella, or anyother you like). Now add on some chopped green onion, and any other veggie you like (red pepper slices are yummy). Add mroe cheese and top with another tortilla. Bake at 425 degrees for five minutes. Slice like a pizza and serve with nonfat sour cream on top.

I can't imagine having never made a quesadilla before. I guess living in Texas skews my perspective on what are common foods in other areas. Quesadillas are as common as grilled cheese sandwiches to me.
Anything is good - spinach, mushrooms, olives, shrimp, tomatoes, jalapeños, bell pepper, artichoke hearts, onion, avocado, zucchini.

Thanks for all the help, recipes and ideas. I am excited to make them tonight. I think I am going to get the smaller tortillas, saute the chicken and let everyone "create their own".
Cheese and Bean Quesadillas (Better Home and Gardens Dieters Cookbook)

- 1/4 cup canned refried beans
- 4 6-to-8 inch flour tortillas
- 3/4 cup shredded reduced fat sharp cheddar cheese (3 oz)
- Bottled Salsa (optional)
- Spread one tablespoon of the refried beans on one half of a tortilla.
- Place bean-topped trotilla, bean side up, in a medium skillet or on a griddle. Sprinkle one quarter of the cheese over the bean topped tortilla.
- Cook over medium heat about 3 minutes or until cheese begins to melt. Fold tortilla in half. Turn and cook 1 to 2 minutes more, or until golden brown.

Close to how I make them, I skip the oil.
Edit: Oh I fold them instead of using two wraps.
I'm big into lime-cilantro chicken quesadillas. Just take a couple of chicken breasts and soak them for a few hours in the fridge in a mix of fat-free yogurt, a non-chunky salsa, and lime juice.
Next, grill it up. You can griddle it but grilling adds so much more flavor.
Then, chop it up really good with a blend of reduced fat shredded cheddar and fat free feta cheese (you can substitute goat or farmer's cheese), cumin powder, chili powder, tabasco, chopped scallions, minced garlic, the juice from a whole lime, and lots of cilantro.
Take a tortilla and lay it down in a heated skillet brushed with a little bit of olive oil, then spread a spoonful of this mixture on half of the tortilla. Fold it and press down. Remove from pan when it's slightly brown and crispy.
Serve this with chopped lettuce, freshly made salsa (tomatoes, more garlic, more cilantro, more lime juice, purple onion, cumin, salt) and chopped avocado.

1/4 cup mayonnaise
2 teaspoons minced jalapeno
2 teaspoons juice from jalapeno
3/4 teaspoon sugar
1/2 teaspoon paprika
1/2 teaspoon cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
dash salt
Mix all together.
