question about pancakes!

So, I have this Bisquick Heart Smart baking mix...I love pancakes..in moderation of course..with fresh berries..Would they be ok if I made a big batch, froze them, and then just popped a couple in the microwave when I was ready to eat them? I'm not really in the mood for making a fresh batch whenever I want them, and I figure it would be a much healthier version than buying actual frozen pancakes.

Yes! I do this with baked goods all the time. Try it in the toaster oven too, sometimes the microwave can make things come out a little flabby.

even a straight toaster works.  I have only done them from the fridge, but it has always worked well.

I do it all the time too... make a full batch of pancakes on the weekend, eat a few fresh ones then freeze the rest in sets of 2. It's so nice on a weekday morning!

I do this often with waffles! (nothing worse than cleaning a waffle maker) but pancakes work this way too.  And in the summer fresh fruit on a waffle with a cup of vanilla coffee is just a divine start to a work day...

I second the toaster oven! It will crisp up the pancakes a little - but makes them seem more "fresh from the grill" in my mind.

If you do want to microwave them... I recommend wrapping them in papertowels pre-zap to absorb some of the moisture. Especially important between the pancake and the plate - you don't want a soggy plate!

Thanks everyone! I made a big batch last night and then tried the toaster oven idea this morning! It works alot better than the microwave..the microwave made them a LITTLE soggy and the toaster oven worked great!
