question about recipes on CC
I have been looking over the recipes in the Recipe Browser and noticed that many do not mention using low fat or reduced calorie items. (low fat cheese, dressings, pasta's e.c.t)
Am I to assume that those items have been used? just wondering

No. The recipes have a nutritional label and that's what you go by. You don't have to eat low fat or fat free, or reduced calorie products to have a low calorie meal. Not every meal needs to be low calorie either. Also, some people need a higher calorie dish if their personal caloric needs are higher, or if they are trying to gain weight.
Just keep browsing until you find some that fit your own personal needs.

I have found many recipes that I really like and will just replace some ingredients with low fat/calorie.

That's the right idea! I often use less fat than called for, and I add high fiber things to recipe too. For instance, in soups and such I add more vegetables. I'm not crazy about processed foods, but then I'm retired and have plenty of time to spend in the kitchen.
Besides the reasons Claire listed, some people who post the recipes don't eat many of the low-fat or reduced calorie foods because they strongly prefer to eat 'clean', ie foods that are as unprocessed and as preservative/additive free as possible and no 'fake' stuff like Splenda or Laughing Cow cheese. Since joining CC I've learned a lot about preferences and beliefs on both sides of the nutritional divide (as I call it) - a lot of the members here are very helpful and it's been quite a revelation to me that dieting does not have to mean feeling hungry 24/7 or eating low fat all the time. But I still like Splenda in my coffee! ;)
I also use the recipe thingy to input the ingredients from dishes at restaurants I dine at every week. Like at Chevy's I always get the shrimp fajita's with two tortilla's, 1 basket of chips & a 1/2 c of salsa and no sides.... so I input all the ingredients and viola :)... makes it easy-peasy for me.
I do a ton of recipes that are balanced macrobiotically and have no add-ins (splenda etc). I need lunches pre-made for work so I make them on sunday-funday and freeze them for quick grabs throughout the week. You can find my recipes under "Fitness Model Lunch" lol... it's the only way I could label things so my friends can find them.
