simple, fast, traditional -- but lower in fat than the original French (which would use heavy cream instead of half/half, ham instead of Canadian Bacon, whole milk cheese instead of 2% ....)

Recipe Ingredients for Quiche Florentine

1 frozen pie crust
2 eggs
1 c half and half
1 t salt
1/4 t ground nutmeg
5 oz frozen spinach
4 oz low fat cheddar cheese
2 oz canadian bacon
1 oz scallions
1 oz mushrooms

Recipe Directions for Quiche Florentine

  1. Preheat oven to 375.

  2. Mince the mushrooms, canadian bacon and scallions, Chop spinach, shred cheese.

  3. Pre-bake pierced pie crust until beginning to turn from white to gold and form flakes. Remove from oven and allow to cool.

  4. Preheat oven to 425.

  5. Beat together eggs, half/half, salt and nutmeg.

  6. Layer chopped veggies, meat and cheese so that no ingredient crosses the horizon of the pie crust.

  7. Slowly pour egg/cream mixture (the "Royale") over the assembled quiche and move to hot oven and bake for 10 minutes at 425, then lower oven temp to 350 and continue to bake until set and golden brown. (about 30-40 minutes)
