Quick, easy, with anything you like, Quiche for a week

Sunday, after grocery shopping I don't even put my peppers, onions, bacon, ham chunks, eggs etc away.  Wash all the vegs, cook the bacon, chop everything up and add to a bowl with 12 beaten eggs and either some milk, OR make it creamier with low fat sour cream.  Cook for 15-20 minutes on 400 degrees and you know it's done when a knife comes out clean. You can put in WHATEVER you want. My mom loves mushrooms and canadian bacon, I like turkey bacon and onions, we make this together in a cake pan and its breakfast for the entire work week.  It heats up great in the microwave and is sooo yummy you are not even tempted to stop at McD's and walk right past the cinnamon rolls some jerk brought to work. Just kidding I love the Cinnabun co-worker. Try it out and let me know different things you put in your quiche!!

 

P.S. I suggest putting cheese on after you know it is done because melted cheese can look like egg juice and its just a whole lot easier to have a knife come out clean without sticky cheese in the way.

This sounds really good. I do a similar thing with frozen spinach (thawed), onions, eggs, and low fat cottage cheese. I have found if you use some eggs and some egg whites it still tastes yummy and it reduces the fat content. I use 2 eggs and 8 egg whites in my recipe. It's great to be able to have this kind of breakfast -- quick, hot, good protein, and tasty!
