One of my favourite veggies.  I like this recipe because it's simple so the natural flavour comes through.  You will need:

 crushed/finely chopped garlic, fresh green beans, dash of sea salt, little olive oil

  • bring pot of salted water to boil
  • add beans, cook for 3-5 mins
  • drain beans
  • sautee garlic in olive oil in non stick pan for 60 seconds
  • add beans to garlic in pan, sautee for 3 mins, the skin will wrinkle slightly, it's done. 
I like to eat this as a side with pan seared salmon, or on it's own with Balkan yogurt.

I've done something very much like yours, but I don't boil the beans first... for a single serving: put 1 tsp of garlic olive oil in a cast iron pan, add big handful of fresh green beans and saute them for about five minutes (also put a lid on them for a minute or two).  This way they're cooked, a bit browned and you don't lose the vitamins in the boiling process. 

quick hint: wrap two heads of garlic with a splash of olive oil in foil.  Bake in 300 degree oven for an hour... squeeze the garlic out of the cloves into a jar of olive oil.  Important: keep the jar in the refrigerator.  You can then use the garlic cloves in cooking (always ready to pop into a dish) as well as using the garlic oil.

the garlic infused oil will keep in frig for approx. 2-3 months... don't really know, 'cause it usually gets used before then... another note: it may look a bit funky in the frig...that's only because the oil has solidified in the cold...bringing it back to room temp. is all it needs...but can be used straight from frig for cooking...
I have always used your method to cook my vegetables.  I find that the boiling water seals in the flavor, and I'm guessing the nutrients, instantly.  I often do them like this and then shock them in ice water to stop the cooking and keep them in the refrigerator for a fast heat up later.  I love green beans and also broccoli in olive oil and garlic.
