Quick Omlette Recipe

Great for a quick snack or side withbaked sweet potatoes (the White firm type not orange)

Ingredients
40 g mushrooms
50 g tomato
4 oz egg beater
20 g onion
1 tsp olive oil
Directions
  1. Chop veg,

  2. Heat skillet,

  3. Heat olive oil for 2 min,

  4. Add veg,

  5. Sautee for 4-5 mins until soft and golden in colour,

  6. Add egg beaters.

  7. Enjoy!
