Quick Tofu Curry with Peas Recipe

Makes 4 servings


Quick, easy, and full of flavor and nourishment-what more could you ask of a dish? It's pretty good just on Its own, but you could serve it with some plain boiled white or brown basmati rice or some Indian naan bread. My favorite accompaniment is cauliflower or shredded cabbage, cooked until it's barely tender.

Ingredients
1 onion
2 tbl olive oil
2 garlic cloves
2 tsp grated fresh ginger
1 tsp cumin seeds
1/2 tsp turmeric
1 cup tofu
3 tomatoes
1/2 cup frozen peas
1 tbl lemon juice
1 salt & pepper
1 cilantro, optional
Directions
  1. Cook the onion in the oil in a covered pan for 5 minutes or until the onion is beginning to soften

  2. stir in the garlic, ginger cumin, and turmeric, and leave to cook for another minute or so.

  3. Meanwhile, deal with the tofu It needs to be drained, patted dry with paper towels, then cut into cubes.

  4. Add the tofu to the spicy mixture in the pan and cook for 5 minutes over moderate heat, so that it becomes golden brown in places, stirring often

  5. Add the tomatoes and peas Cook for 3-4 minutes, until the peas have heated through and the tomatoes have softened. Stir in the lemon juice, taste, and season with salt and pepper

  6. Snip some coriander over the top, if using, and serve
