anybody have any good recipes for this "superfood" quinoa. I had it yesterday for the first time and its awsome. Just would like some variations.

Here's one I found on the back of the Trader Joe's organic Quinoa I bought not too long ago:

I did modify it a little bit from what's listed - I added about two teaspoons paprika to the Quinoa as it was cooking - it produced a great flavor.

I put 1 c quinoa, 1/4 c dried cranberries, 2 T raisins in 3 c chicken stock.

The result was delicious.

oh my, I love quinoa. I usually use it as a rice replacement in a stirfry or put some veggie chili on top of it. Tasty!

Sometimes I'll cook a cup of it the night before and heat it up for breakfast. I'll eat it like oatmeal so I'll put whatever fruit I can think of (apples, raisins, cranberries, blueberries... whatever!), add some maple syrup, cinnamon and ground flax seed. It's nice!
i like to cook it, let it cool, and add copped tomatoes, onions, cucumber, green pepper, and parsley or cilantro. i add a TON of veggies- usually there are more veggies than quinoa. then i dress it with lots of lemon juice, extra virgin olive oil, salt, pepper, and cumin. SO good, and very refreshing. almost like tabouli.

Sorry for the very late post, but I just cooked quinoa for the first time and had to add this. I'm an awful (lazy) cook so the quicker the better. I combined 1/4 c quinoa and 1/4 c raw lentils in about 1.5 c vegetable broth and cooked for about 20 minutes. It was delicious and just the right fluffiness! I think it was a bit too much for one but now I have leftovers. Good combination, too; I think it's a complete protein this way (if you buy into that stuff).
