I've discovered a super breakfast lately.. and have started making my own. I initially found quinoa porridge on the shevles at my fave store back home in new zealand, but can't find it anywhere here in the UK.

I roast 500gms of quinoa in the oven... until golden brown and 'nutty' then I grind it all up in a coffee grinder until it's as powdery as possible. Thats it, it's ready to use.. just add boiling water to say, half a cup of the ground quinoa.

The great thing about it is it's low GI... very filling... and a brilliant carbohydrate for a big day. I mix it with soy milk and frozen berries with lots of cinnamon. It's around 380 calories per 100grams dry, but once mixed with fluids it soaks em up and becomes a huge bowl of nourhsing goodness! (:
