A delicious tea bread
| 1 | apple, peeled and chopped |
| 4 | oz margarine (soft) |
| 6 | oz brown sugar |
| 2 | large eggs |
| 4 | oz wholemeal flour |
| 4 | oz self-raising flour |
| 1 | pinch salt |
| 1 | teaspoon mixed spice |
| 1 1/2 | teaspoons baking powder |
| 4 | oz raisins |
| 4 | tablespoons milk |
- Preheat the oven to 180C and line a 1lb loaf tin with greaseproof paper making sure the paper comes well up above the edges
- Mix together the margarine, flours, eggs, baking powder, spice & salt with a hand-held mixer until well-combined
- Add the chopped apple and raisins and mix well
- Finally add the milk and stir to combine
- Transfer the mixture to the prepared loaf tin and spread evenly
- Bake for 1 hour or until the loaf feels springy and a skewer inserted into the middle comes out clean
- Remove the cake from the tin and allow to cool a little on a wire rack before peeling off the papers
- Cut into slices and enjoy!
