Raisin and Apple Fruit Loaf Recipe

Makes 14 servings


A delicious tea bread

Ingredients
1 apple, peeled and chopped
4 oz margarine (soft)
6 oz brown sugar
2 large eggs
4 oz wholemeal flour
4 oz self-raising flour
1 pinch salt
1 teaspoon mixed spice
1 1/2 teaspoons baking powder
4 oz raisins
4 tablespoons milk
Directions
  1. Preheat the oven to 180C and line a 1lb loaf tin with greaseproof paper making sure the paper comes well up above the edges

  2. Mix together the margarine, flours, eggs, baking powder, spice & salt with a hand-held mixer until well-combined

  3. Add the chopped apple and raisins and mix well

  4. Finally add the milk and stir to combine

  5. Transfer the mixture to the prepared loaf tin and spread evenly

  6. Bake for 1 hour or until the loaf feels springy and a skewer inserted into the middle comes out clean

  7. Remove the cake from the tin and allow to cool a little on a wire rack before peeling off the papers

  8. Cut into slices and enjoy!
