Same as original Raspberry, Avocado & Mango Salad but made for one
| 1/2 | cups raspberries, divided |
| 1 1/2 | tbsp. olive oil, extra virgin |
| 1 | tbsp. garlic powder or 1/3 garlic clove |
| 1 1/2 | tsp. pepper |
| 2 | cups mixed salad greens |
| 1/3 | ripe mango, diced |
| 1/3 | small ripe avocado, diced |
| 1 | tbsp green onion, chopped |
| 1 | tbsp. almonds, sliced |
- Puree 1/2 c. raspberries, oil, vinegar, garlic, salt and pepper in a blender until combined.
- combine greens, mango, avocado and onion in large bowl. Pour the dressing on top and gently toss to coat. Divide the salad among 3 salad plates. Top each with the remaining raspberries and sprinkle with nuts, if using.
