High Protein Pancakes
1/4 cup unbleached white flour
1/4 cup cornmeal
1/4 cup soy flour
2/3 cup egg beaters
2 to 4 TBS soy milk or soy creamer
1/2 tsp baking powder
Whisk together. Cook 3 pancakes in a non stick pan sprayed with PAM until golden brown on both sides. For an additional nutritional boost, serve with cottage or ricotta cheese and fresh fruit.

chobe, I'm going to try it with some whole wheat flour or added wheat germ and maybe some oat bran to kick up the fiber.
I had one (1/3 of the recipe) for lunch and it was really filling. It was a bit bland and I'm thinking of adding some lemon zest and honey to the recipe.

I don't have a waffle iron. If somebody would like to try, I'm interested. The batter might not rise enough for waffles.

YUM! I made these and switched the cornmeal to milk soaked oats. Added blueberrys and a little applesauce to the top (not a syrup fan), and they were like a naughty dessert for breakfast! Thanks, Clairelaine!
I made them again, and with oats instead of cornmeal. But I pulverized my rolled oats in the food processor instead of soaking them, to make a fine flour.
U should use something OTHER than unbleached wheat flour because there is NO nutritonal content in that stuff!! Use whole grain flour or something: although all flour is not all that good for you!
Wow, that sounds really good! But I personally would use whole wheat flour and whole eggs. Eggbeaters are kind of strange to me. But the idea of adding cornmeal is great!
There is nutritional value in unbleached wheat flour.... carbohidrates! May not be packed with micro-nutrients, but has a fine macro-nutrient...
Most American white flour is enriched, so it does have nutritional value. It improves the texture of baked goods because of the gluten it contains.
