I'm trying to get more fiber in my diet with fiber rich foods, such as bulgar or barley.

I'm looking for great and tasty recipe ideas for these fiber-rich foods. Any ideas would be appreciated.

Here's one for you
Tabouli
    * 1 cup Bulgar wheat
    * 2 cups Boiling water
    * 2 Tomatoes -- finely diced
    * 1 bunch Green onions -- sliced
    * 3 tablespoons Fresh mint -- chopped
    * 2 cups Fresh parsley -- chopped
    * 1/2 cup Fresh lemon juice
    * 1/4 cup Olive oil
    * Black pepper to taste
1. Place uncooked bulgar in a bowl; pour in water over it and let it soak one hour (stir occasionally) 2.Drain well in a fine strainer. 3. Return bulgar to the bowl and add all other ingredients; mix well. 4. Chill for 2 hours.
Oh thank you! I actually happen to have most of those ingredients already. I'll give it a try.
Wild Rice Pilaf

1 cup wild rice (not a mixture)
1/2 cup whole wheat orzo pasta
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup grated carrot
1/4 cup chopped nuts or sunflower seeds
1 tablespoon oil
salt & pepper

Cook and drain the rice and orzo separately. Toast the nuts over low heat until they are just barely golden.  Saute the vegetables in the oil until soft and begining to turn golden.  Combine with the other ingredients, season to taste.  Add fresh herbs just before  serving.
Mushroom and Barley Soup

1 pound mushrooms, any kind, cleaned and chopped
1 medium onion, chopped
2 or 3 cloves garlic, minced
1 TBS oil
1 cup pearled barley
2 quarts vegetable stock
salt & pepper

Saute the mushrooms and onions in oil until soft.  Season well with salt and pepper.  In a heavy soup pot, combine the sauted vegetables with the barley and stock.  Simmer, covered, for an hour or until the barley is soft.  Check and add water if the liquid boils down.

I tried the Tabouli yesturday with some hummus and wheat pitas. I also added garlic and zucchini (since I had a bunch left over). It turned out to be pretty tasty. My boyfriend loved it and scarfed it down.

The mushroom and barley soup sounds yum and I think I'll be trying that one out next.

I like putting barley in my pasta sauce, lasanga, and chili.  I love the bouncy "pop" when you bite barley, and I think it does well for a gound meat texture.  Way yummy in lasanga, btw.....
Here's a simply AWESOME recipe!!

Lemony Bulgur Salad (serves 6)
  • 3 cups boiling water
  • 2 cups bulgur, uncooked
  • 1/2 cup lemon juice
  • 2 cups canned garbanzo beans (chickpeas), drained and rinsed.
  • 3/4 cup cucumber, peeled, seeded and chopped
  • 3/4 cup celery, chopped
  • 3/4 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 1/2 tsp dried tarragon
  • 3 tbsp olive oil
  • salt and pepper to taste
  1. Combine water, bulgur, and 1/3 cup of the lemon juice in a bowl; let stand for about 15 minutes.
  2. In the meantime, combine garbanzo beans (chickpeas), cucumber, celery, onion, feta cheese, and tarragon; blend well.
  3. Add bulgur and toss to combine.
  4. In a small bowl, combine remaining lemon juice, olive oil, and salt and pepper to taste.
  5. Pour over bulgur mixture; toss.
  6. Cover and chill for about 30 mins before serving.
Nutrition Info:
365 calories, 11g fat, 12g protein, 59g carbohydrate, 13g dietary fiber, 11mg cholesterol, 405mg sodium.

Okay, I just had to post this, because I thought this was way cool.

Did you know you can cook pearl barley in a rice cooker?  Yup!  It's 3 cups of water to 3/4 cup of pear barley, and set your rice cooker.  This will give you a slighty sticky product.  I haven't tried it yet with non-pearled barley, but the experiments will continue...
