recipe for peanut and chocolate granola
I saw this recipe on Nigella Feasts as I was doing some homework today and I know that she doesn't exactly care about calories and fat but I just shocked about how decadent it was. I mean granola's full of calories to begin with without ading TWO cups of peanuts, chocolate, and 1 and 3/4 cup of other seeds. I know nuts and seeds are healthy but MODERATION, no. I hope this recipe can feed like 50 people.
1/4 cup best quality cocoa
4 1/2 cups rolled oats
1 cup sunflower seeds
3/4 cup white sesame seeds
3/4 cup apple compote or applesauce
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/3 cup brown rice syrup or rice malt syrup
1/4 cup clover honey or other runny honey
3/4 cup light brown sugar
2 cups raw peanuts
1 teaspoon kosher salt
2 tablespoons canola oil or sunflower oil

You can always lighten up a recipe and make it more health/diet friendly! :) I do it all the time.

Ok the cocoa is fine. Maybe dutch process
Oats are good - rolled not instant
Applesauce - make sure its no added sugar
Its the brown rice syrup/rice malt syrup that needs replacing
The rest may be high cal but are healthy
Also the oil at the end... hmm.
Ok so this is granola. How about we reduce the "extras" by 1/2-3/4. Chop the nuts in half so it seems like there is more.
Get rid of the oil - use apple juice instead (or a natural juice, no added sugar)
Dont need salt.
Maybe sub splenda for less cals.
Add in some wheat bran etc. high fibre low cal cereal.
At the end you coudl stir in some rice bubbles - not the best but they're a filler. Or puffed rice

a tsp of salt will not add that much soduim and granola simply needs salt. go for the salt.
a .5 cup serving of this is 250 calories. if you remove the peanuts it becomes 157 calories.
