recipes with canned pumpkin

I finally remembered to pick up a can of canned pumpkin today.  Not the pie filling, the actual canned pumpkin.

From what I hear and read on the label it is healthy, and it tastes pretty good.

What I am looking for are recipes to utilize this.

 

IF ANYONE HAS USED THIS AND HAS RECIPES WOULD YOU BE SO KIND  AS TO PASS THEM ALONG HERE!

my veeeeeeerry favorite is 1 snack pack thingy of sugar free jello vanilla pudding + 1/2 cup caned pumpkin + cinnamon. its like pumpkin pie, but buetter!!! 

I like to take a packet of Kashi truly vanilla hot cereal, mix in two packets of equal along with cinnamon, nutmeg, and ginger.  Nuke it for 1 minute, then stir in a couple of spoonfuls of canned pumpkin, and then nuke for another minute.

I mix it in with my oatmeal, or spread it on my toast with cinnamon.  It does have a little bit of a funny taste to me, so I usually have it with coffee to kill the after-taste, but some people dig that flavour.
One cup of pumpkin
One white cake mix
Two eggs

Mix together and bake as a regular cake.

Great for company and pot lucks.  No leftovers.

These are SOOOO yummy and moist.  A favorite!  I drizzled them with vanilla almond bark, but you could use your favorite cream cheese frosting.  But they are good plain, too.

Me too - coming home and D'oh!, forgot the pumpkin again so when I remembered, grabbed 3 cans.

Not exactly a recipe but delish!!!

Get a 4pack of sugarfree vanilla pudding.  Mix one cup in a bowl with 3 TB of canned pumpkin, a packet of splenda and some pumpkin pie spice.  Stir.

Eeezy and you can adjust to taste.  I find 1 can is right for all 4 of the pudding packs and got this from a CC member (delphan?)

Hey sunshine - sun here!  This thread got me to make some for midday snack and I was wondering - what if I didnt put the SF pudding in, which is basically like what you have there.  Next time I'll give it a try before w/o it - I can always add it if I choose and I might be able to drop off the calories.  Granted its double the size but it'd be healthier to just double the pumpkin.  Its all about the taste :D
1 cans coconut milk
1.5 cup vegetable broth
1 onion, quartered unpeeled
1 stick of lemongrass, bruised and cut into 1" slices
3 kefir lime leaves
2" section of ginger, cut into pieces

1 can pumpkin

simmer all ingredients but pumpkin for 1 hour
strain out lemongrass, onion, leaves, ginger

whisk in pumpkin over low heat

serve with cut up mint leaves, cilantro or toasted coconut
mmmmmmm.

you can substitute yams or sweet potatoes for this as well
i mix it with yogurt and fiber one. sometimes cinnamon and or better n peanut butter.

I have a recipe for a crustless pumpkin pie using Libby's pumpkin
