I have a huge jar that I have to use up before 2 months.  I don't drink coffee.  Suggestions?

Why do you have to use it up?  Just throw it out.

If it's the stuff that basically tastes like plastic and cream I'd toss it or give it to someone who might use it.

 I can understand that, but this stuff can hardly be called food.  How is it wasteful to get rid of something that's not good for you?  Wouldn't it be more wasteful to consume it and take in all the chemicals and junk that's in it?

French Vanilla Dream Bars

Serves/Makes:4 dozen
Ready in: 30-60 minutes

***Crust***

1/2 cup butter -- softened
1/3 cup firmly packed brown sugar
1 1/4 cup flour

***Filling***

3 large eggs
3/4 cup Coffee-mate liquid, French Vanilla flavor
1/3 cup firmly packed brown sugar
3 tablespoons flour
1/4 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped pecans
1/2 cup finely chopped dates
48 pecan halves -- optional

***Vanilla Icing***

2 cups sifted powdered sugar
3 tablespoons melted butter
3 tablespoons Coffee-Mate liquid, French Vanilla flavor

Preheat oven to 350 degrees. generously butter and flour a 13x9" pan.

For crust: Cream butter and sugar. Add flour; beat until well blended. Press into bottom of pan. Bake 10 minutes; let cool 5 minutes.

For filling: Beat together eggs, coffee-mate, sugar, flour and salt. Stir in coconut, chopped pecans and dates. Spread evenly over baked crust; bake 25 minutes, or until golden brown. Cool. Spread thin layer of icing evenly over top. Gently press pecan halves into icing, so each bar will have one. Let icing set before cutting.

For icing: Combine sugar, butter and coffee-mate. beat until smooth.

I love putting it in my oatmeal!

Pumpkin spice in maple and brown sugar oatmeal is fabulous!

use it as a substitute for anything that calls for whipping cream, heavy cream, or whole milk.  It actually is usually lower in calories these things.

How much creamer do you put in place of cream or milk?

use the same amount of creamer for the milk....

Oh I have the powdered kind...would anybody know how many tsp of powder per cup of milk?

Sorry to say this, but most coffee creamers are evil.  They contain ONLY trans-fats (like Crisco) and are only empty calories.  Real cream or half-n-half is better for you than that junk.  Just toss it in the trash.  You are not a human garbage disposal. 

Oh, I wasn't aware that they were purely trans fats.  Okay, throwing it out now...
