Any recipes for make ahead breakfasts or lunches that are low calorie?
If anyone has some good breakfast or lunch recipes that can be made the night before or can be made in large quantities and reheated please share. I am having a hard time finding good, low cal items to bring to work! I usually have oatmeal in the morning and either soup or a salad at lunch time... so boring!
A BLT sandwich made on Sara Lee 45-calorie-per-slice bread has less than 200 calories. I use the pre-cooked bacon and just heat it in the microwave for 35 seconds. A 24-cracker serving of Special K crackers is 120 calories. Add a couple of tablespoons of hummus for scooping, and it's less than 200. Add a piece of fruit to either of these combinations and you've got a lunch totaling less than 300 calories. An open face albacore salad sandwich is about 150 calories. Small can of albacore plus one tablespoon of mayo plus one tablespoon of sweet pickle relish plus a little diced celery, some salt and pepper. It makes enough for two open face sandwiches. That's what I had for dinner last night, but I had two of them for a total of 300 calories. Just some ideas. I'm sure you'll get more.
Chick pea curry can be made in a massive batch and heated up later - I actually prefer it heated up the next day, it seems to taste better! It's very easy and cheap too - veg can be bought cheaply from greengrocers/markets, cans of chickpeas are rock bottom. A great stand by meal!
1 large onion
Garlic (optional)
2 Large carrots
1 Stalk celery
Mushrooms
Peppers
Spinach
Basically any vegetable you have around
1 can chick peas, drained and rinsed (or kidney beans or any kind of bean)
1 jar of tikka massala curry sauce (I use this for speed, but you could easily just add curry powder/spices into the mixture, with a tin of tomatoes for the liquid)
Chop up all the vegetables, grate the carrot, cook them all in a tbsp oil in a large pan. When soft, add the chick peas and the sauce, then bring to a simmer. Let it cook for about 15 mins, or until the veg is cooked through.
This can then be refrigerated and eaten with brown rice, or on top of a sweet potato, or with cous cous etc. I even have it cold on top of salads sometimes. Its very versatile and delicious, and is full of fibre and nutrients.
Something is bugging me. If I remember correctly, you are an recovering anorexic, trying to GAIN, right? So why do you need low-cal recipes?

If you like salmon, try making a Salmon Salad. Mine consist of canned Bumblebee Wild Salmon, which is only 90 calories per serving. Mix in one sliced boiled egg - 70 calories and some sliced onions - a few more cals. Drizzle a little olive oil (2 tsp about 80 calories) Voila!
Or you could try some Stoneyfield Organic Yogurt (120 calories), mixed in with a cup of Kashi GoLean Crunch Cereal (190).
Or a large banana with peanut butter. Or microwave an apple and cover with oats and cinnamon.
Oh, & "P.S." -- If you are a recovering anorexic, these would be considered snacks for you, you need to eat more. Ever since I've been eating more, I've seen tons of benefits, weight loss for me (although you may not need it), more energy, healthier skin and hair, and no more blacking out and forgetting. So do eat.
When I was working I made crustless, mini eggwhite quiches in muffin tins. My favorite was spinach with low fat cheese. I'd cook the spinach and drain it, squeezing out all the moisture possible. Mix it with the beaten egg whites and stir in the cheese. Season the mixture any way you want. divide into muffin tins lined with paper liners and bake at 350 f for about 12 to 15 minutes, or until they are firm. Cool, refrigerate, and there are 12 breakfasts ready for you. Actually for me it was 6 breakfasts because I always had two. They freeze well too.

I love this idea!! This is exactly the type of thing I was looking for! I am going to make them soon!

You guys are missing the point, I AM eating and actively trying to find healthy meals that I can eat and aren't on my "safe" list of foods. I am trying to add variety to my diet. I will not eat high cal or fattening foods, I would rather eat low cal, healthy alternatives, but eat larger quantities. I am seeing a nutritionist and I have a daily caloric goal, which I meet everyday. I am doing very well and very close to 90% of my ideal weight. I was simply asking for advice and new recipe ideas that will help me break away from my ed routine.

Hi! I made these last night and had two of them this morning. They were great! My only question is how did you keep them from caving in? They looked great right when I took them out of the oven, then it was like all of the air sucked out of them and they deflated!! If you have any tips to stop that let me know! Otherwise thanks for the idea, I really appreciate it.
