Recipes using Kidney beans
So last year I must have decided to go on a shopping spree and bought a bunch of kidney beans. Now I am moving in a couple of months, and I live by myself. So it takes me quite some time to finish recipes that I cook just because I eat one serving and then will freeze leftovers and eat later. So I was wondering if anyone has any recipes for kidney beans, besides the usual chili. Thanks!
If they're dried ones you can soak, cook and freeze them in bulk. Then you can add them to dishes as and when.
I really like these Spicy Beanburger Pittas..... mash the kidney beans, bind with a little egg, add herbs & spices etc. This Cannellini Bean Salad works just as well with kidney beans. Pasta Fagioli ... again, the recipe says cannellini beans but kidney beans are fine.
Well, they work good in bean and rice burritos. Add some cheese, salsa, sour cream, avocado, yumm sauce, etc... and you have yourself an extremely tasty, extremely cheap meal.

Hmmm... you should mash them up and refry those beans! Make it into a tasty dip for chips. Then whatever you don't finish can be brought to work and you can let your collegues chow down. You'll be getting rid of your bunch-o-beans and I'm sure you co-workers will thank you.
When I'm really lazy, I like to make myself a bean salad. Basically it's just cooked/mashed kidney beans with mayo and sweet relish... sounds kinda nasty but seriously it's delish.
Saute (using broth instead of oil) sliced onions till tender, then add greens such as chard, spinach, or kale and cook till tender, then throw in kidney beans and chopped tomatoes and heat thru. Sprinkle with lemon juice, salt, and pepper, and serve.

Red beans and rice. I use a ham bone (in fact, this dish is the reason I buy whole hams once a year), but since you are vegetarian, you can skip that. Saute lots of chopped bell peppers, celery, and onions in some fat in a soup pot. Add some peeled, smashed garlic cloves, fresh parsley and green onions, thyme, bay leaves, Cajun seasoning if you have it, a generous dash of Worcestershire sauce, cayenne pepper or Tabasco, the picked over and washed beans and enough hot liquid to cover by at least one inch. Bring to a boil, reduce heat and cook until beans are tender, adding hot liquid if necessary to keep the beans covered. Serve with steamed white rice, top with minced parsley and chives or green onions, and pass the Tabasco sauce.
mmmmm... my first thought was red beans and rice too! cajun seasoning is not optional. try a spicy veg "sausage", or some veggie bullion to add some extra flavor. & Skip the Worcestershire sauce as it is typically made with anchovies.
(and remember beano really does help with gas)
& if you can't eat it all - cook up a big batch, invite friends over to help or donate any unopened food packages to a local food bank.
Beano is not vegetarian. It contains gelatin. However I believe there are veg substitutes out there - you just have to search for them. You can also make or buy veg Worcestershire sauce.
