Red Beans & Brown Rice (Vegan) Recipe

Makes 8 servings


A meatless, healthy version of spicy red beans and rice

Ingredients
2 cups beans, red, cooked
2 cups rice, brown, cooked
2 tbs olive oil
1 cup onion, chopped
1 cup celery, chopped
1 cup pepper, sweet green
4 cloves garlic, minced
1/2 tsp salt
1/4 tsp pepper
1 tsp hot sauce
Directions
  1. Heat the olive oil in a large saute pan and saute the onions, celery and pepper until soft.

  2. Add the garlic and saute for 2 minutes

  3. Season with salt, pepper and hot sauce

  4. Combine in a casserole dish with the cooked beans and rice, mixing well. Taste and adjust the seasoning

  5. At this point it can be refrigerated for later

  6. Heat the dish, covered, in the oven at 350 for 40 minutes
