A meatless, healthy version of spicy red beans and rice
| 2 | cups beans, red, cooked |
| 2 | cups rice, brown, cooked |
| 2 | tbs olive oil |
| 1 | cup onion, chopped |
| 1 | cup celery, chopped |
| 1 | cup pepper, sweet green |
| 4 | cloves garlic, minced |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
| 1 | tsp hot sauce |
- Heat the olive oil in a large saute pan and saute the onions, celery and pepper until soft.
- Add the garlic and saute for 2 minutes
- Season with salt, pepper and hot sauce
- Combine in a casserole dish with the cooked beans and rice, mixing well. Taste and adjust the seasoning
- At this point it can be refrigerated for later
- Heat the dish, covered, in the oven at 350 for 40 minutes
