Let me start by saying that I can't cook. I am trying though. I found a quiche recipe and it sounded good and I was thinking of cooking these but it makes 12. It would take me forever to eat 12 quiches. So how can I use leftover quiches? If I made these on Sunday and wanted to take some for breakfast to eat at work I guess I can just pop it in the microwave?

If they are crustless quiches, they can be frozen and reheated in the microwave and are perfect. If they have a crust, they freeze well but have to be rewarmed in the oven, the mike makes them hopelessly soggy.
They are likely crustless, since we are calorie-conscious here after all, so you are good to go.
