Require chicken marination ideas
I have just bought the Nu Wave oven and am absolutely loving it. However, I do require new ideas for marinating chicken breasts or tenders. The one I tried yesterday was marinating chicken tenders in tandoori sauce and those came out wonderful. I would be glad to hear more ideas.
We always marinate our chicken breasts in Italian dressing. You can also try all of the variations of italian dressings and vinegarettes. We have tried several, but still like just plain italian best.

This isn't a marinade exactly, but if you've never brined chicken, it's worth doing. I'm butterflying and grilling a whole chicken tonight, and it's brining just now -- dissolve 6T each of salt and sugar in about a quart of water. Put the chicken in the brine for 2-4 hrs, then rinse well and dry before cooking. You'd still want to season with pepper and any herbs or spices you fancy, but don't add any more salt. Brining makes chicken super-moist and flavorful.
A rub I like to do is to make a pesto of rosemary, thyme, and sage -- great big handfuls of each, about 1pt rosemary, 2pts thyme, and 1-2 pts sage (rosemary is very strong) in 1/2 cup of olive oil. I salt the chicken, then rub the herb pesto on the chicken, under the skin before cooking.
Finally, an actual marinade: slice 2" of ginger root into thin coins (peel the ginger first) and put in a saucepan with 1/2 cup soy sauce mixed with 1/2 cup water and 3T sugar. Simmer for 10 minutes, then allow to cool. Stir in 2T rice wine vinegar, then put the chicken in to marinate for about an hour. If you need more liquid (to cover the chicken) just add water. Don't add more soy sauce or your chicken will be awfully salty.
Those are my 3 favorite ways to prep chicken, although I usually toss a whole one, butterflied, on the grill or on the broiler. Dh and I get the breast, the kids get the legs, and thighs, and the backs, necks, and wings go into stock.
My favorite is lime-tequila. Lime juice and zest, half a shot of good tequila, crushed garlic, chopped cilantro, salt & pepper, and if you like, hot sauce.
Marinate in a plastic bag for about 30 minutes to an hour, no longer. You can cook the marinade down to make a sauce.
