The original recipe is from a friend and pretty high calorie - but yummy, but very sweet! I cut the amount of marshmallows and whipping cream in half from the original recipe. Personally, I'd like to try vanilla yogurt or sour cream as a substitute for the whipped cream, and for a different flavor - not so sweet, but still creamy. Also, I substituted 1/8 c of Splenda for the 1/4 c of sugar originally called for and which is not so good for a healthy eating plan. I think Splenda Brown Sugar might be an interesting flavor change as well. The top ingredients are the base of the salad. The next 4 are for the custard dressing. In looking this over, I'm thinking some diced celery and/or a diced green apple in place of one of the oranges might be an interesting alternative. I think this has a lot of possibilities for interesting options. You might add diced chicken for some protein in a salad - in which case, I would use sour cream...

Recipe Ingredients for Revised Ambrosia Salad/Dessert

20 oz. pineapple chunks, drained (reserve juice)
1/4 lb. marshmallows, mini
2 oranges, cut in small pieces
4 oz. mandarin oranges, canned (reserve juice)
1 lb. grapes, white or red, cut in half
1 oz. nuts, chopped small
1 Custard Dressing
1 egg (beaten)
1/8 c. Splenda
1 T flour (generous) plus
1 reserved juices
4 oz. whipping cream (1/2 pt.) (or substitute with sour cream or vanilla yogurt)

Recipe Directions for Revised Ambrosia Salad/Dessert

  1. Cook custard in top of double boiler until thickened. Put in refrigerator to cool. If too thick add some milk to thin. Fold into salad.

  2. Whip the cream until thick and add to the salad. Or use sour cream or vanilla yogurt.
