I have an abundance of rhubarb growing in my yard, any body have suggestions what to do with it all??

It also strawberry season, they make a great combo. Compote's are great and of course a strawberry rhubarb pie is inevitable. If you juice that would make a nice change.

I love rhubarb. I use to cut it up put them in crock pot. Add sugar. Cook till done and server over warm bisquits yummy. But needless to say its full of calories.

Rhubarb and strawberry crumble: Chop some rhubarb and strawberries and sugar. Make your own topping using oats, sugar and a little butter, flour.

Stewed Rhubarb: Chop up, add a little sugar to taste and then use this with lots of things! Cereals, porridge, custard, ice cream, eat on its own.

Makes 12 servings.   If your counting points its only 1 pt per 1/3 c serving.



Servings: 12 Preparation Time: 10 min Cooking Time: 55 min Level of Difficulty: Easy So good, you can eat it by the spoonful. Serve over light ice cream and fresh fruit, or as a condiment for something savory like chicken, turkey or pork.

Ingredients

3 cup rhubarb,

1 1/2 pound strawberries

3/4 cup splenda

Directions

  1. Combine rhubarb, strawberries and powdered sugar in a medium-size, nonreactive sauce pan; toss until sugar melts.

  2. Cover pan and set over medium to medium-high heat until mixture begins to boil, about 5 to 10 minutes. Uncover pan, reduce heat to low and simmer until fruit breaks down into a sauce, about 45 minutes. Serve warm or chilled. Yields about 1/3 cup per serving.

  • rhubarb on it's own is very low cal... approx 20 cal per 100 grams. It has 5 grams of carbs, of which 2.5 are fiber...

    it's a vegetable not a fruit, and it is very good for you. It only gets a bad rep because it is always used in fatty/sugary desserts to mask it's natural sour taste

    but there are ways to make it without having to use a ton of sugar and butter

    my fave is taking about 2 cups of it (200grams) and sprinkling it with cinnimon and stevia (0 cal natural sweetener from the stevia plant) and popping it in the microwave for a couple minutes... it tastes just like the inside of rhubarb crisp except I havent added any extra sugar or fat, so the entire thing is just 40 calories (one serving) ...sometimes ill add a little oatmeal too so its more like rhubarb crisp

    my mom used to eat the stalks on their own when she was a kid... i dunno if thats appealing to you, but it would be like sour celery

    you could try adding rhubarb to soups, salads, and stir frys too

    Jam, rhubarb makes amazing (and beautifully pink) jam.  I think you can make it with splenda if you wanted, but real sugar isn't that big a deal, since you probably won't be using gobs of it at once, just a few teaspoons.  Plus it will last all winter.

    mmmm, now you have my mouth watering! I can't wait to get home and see if our Rhubarb survived the winter!

    I make strawberry jello with rhubarb in it. You could use sugar free if you want. Just put some rhubarb in a pot with the amount of hot water the box calls for and boil it until it breaks down, then add the jello powder and the cold water. My mom makes yummy rhubarb muffins. They aren't low cal but you could use a low cal muffin recipe and just add rhubarb in for whatever fruit it says.
