I have some leftover brown rice from dinner the other night.  I want to use it up tonight but can't think of any good ideas.  I originally used it mixed with shrimp & veggies and then stir fried it - very delicious, but I don't want to eat the same thing again two days later.  Any ideas?

i really like rice and beans together. pinto beans are my favorite over rice topped with salsa.

i mean brown rice can be eaten with anything... but its all going to be similar to your shrimp and veggies since ideally i think we all strive for the protein, veggie, carb combo. if i had brown rice on my agenda tonight i think i would eat it with either lentils (bc im on a kick) or on the side of a grilled piece of fish. Sorry to not be helpful.

I'm making chicken black bean salsa stuffed peppers out of brown rice mixed with some wild rice I have left over tonight.

 

RICE PUDDING! :D


(I'm not a big rice fan, but I LOVE rice pudding, so that's always my solution to leftover rice. XD )

You could add some tomato paste (diluted with water), frozen peas and corn, onion and garlic with some cumin/chili powder and salt & pepper, maybe?

you could also eat it like oatmeal in the morning (replace the oats with rice and add whatever in there)! 
I made chicken & rice:

i can chicken, onions, green peppers, garlic, homemade salsa, hot sauce and rice all mixed together and heated. 

Quick, easy, and delicious!

Tonight I'm using some leftover brown rice in a chilled salad with garbanzos beans, lentils, carrots, mushrooms, onions, and feta cheese.  I'm going to add in some spices for a middle eastern flavor.

I like brown rice with broth and veggies... yum yum

definately Goya Black Bean Soup over Brown Rice.  Uncle Ben's has a microwave brown rice pouch...makes it fast...tasty and healthly.

TACOS

Add refried beans, chili powder, Taco seasoning mix, Tomatoe sauce & some ketchup, garlic powder, onion powder & pepper.

South Beach makes a whole wheat tortilla that is pretty good.  Add trimmings & enjoy
