I wanna play in the kitchen!  :-)

I love Pad Thai and similar dishes.  I just bought some rice noodles and have some natural peanut butter and want to try and make something similar but easy to make.  Anyone have any good recipes out there for me?  Other ingredients that I currently have that could go into it are soy sauce (lite of course :-) ), garlic, rice vinegar, sesame seed oil, scallions, chili powder.   I'm going to try and concoct something with this but if you have any recipes that I can maybe use today or for a later time I'd appreciate it.  Thanks!

Soak some boneless, skinless chicken thighs cut in chunks, in 1/4 cup soy sauce with 1 tbsp cornstarch for about 5-10min. Saute garlic, scallions, red pepper slices in sesame oil. Add chicken, turn heat to med-high, brown.

Mix chili powder, peanut butter & 1tbsp honey. Maybe add the rice vinegar? Pour over chicken & cook another few minutes, stir constantly.

I've done this minus the pb but maybe the rice vinegar will thin it down a bit. I usually add more chopped up veggies, like celery, peppers, broccoli, brown mushrooms, cabbage & bean sprouts. I use the chicken thighs because breast meat seems to dry out too quickly & the dark meat is tastier.
Thanks darc, I'll have to give that one a try, it sounds yummy. 
The concoction I came up with yesterday was okay.  Think I might
have put in too much pb, sauce seemed a bit too thick.  I'll have
to keep working at it.
