trying to expand my horizons to the rice world. Any ideas would be appreciated.
Something I like to do when I make rice to go with chicken breasts is when I cook the rice, I use beef or chicken broth instead of water. Adds flavor without cals, & everyone seems to like it.
Last Christmas someone made brown rice with canned French Onion soup instead of water, and everyone raved about it because it was amazingly good for how simple it was. Probably a load of sodium but if you just eat a small portion of it, it shouldn't be too insane.
Are you looking for more brown rice, white rice, or all rice in general?

I like making pilaf with wild and brown rice. I take about 1 part wild rice and 3 parts brown rice and figure out how much water I would need to cook those. Then I boil the water with a few vegetable bullion cubes, throw in the wild rice, cook it for 20 minutes, throw in the brown rice and some chopped vegetables like celery, onion, bell pepper, garlic cloves and mushrooms and cook for 40 more minutes. It's really good - be sure to use bullion or broth though or else it might be bland.

Rice & spinach - 4 servings
Cook brown rice in chicken broth to yield 2 cups cooked
saute in a very small amount of olive oil - onion, celery, grated carrot and garlic. Add a pound of baby spinach leaves and cover. Simmer on low until the spinach is wilted. Uncover and simmer until most of the liquid is evaporated.
Combine the spinach with the rice, divide into 4 portions and serve.
I like this rice with any meat.
2 cups of your fav rice browned in a skillet with about 2 tablespoons Olive Oil. Once it browns a bit, add diced onion (and any other veggie you like) and saute with the rice. Add chicken broth little by little until rice is fluffy and soft. Goes with anything.
I love this rice recipe! Very simple!
1 cup long grain rice. Not the quick rice.
2 1/4 cups chicken stock
1/4 cup chopped cilantro
3 teaspoons lime juice
Add all to a large glass microwave bowl and mix. Set in microwave and cook on high for 20 minutes.
Yummy! The lime juice gives a very good zip to rice! This is great cold or hot!

Dahi rice is cooked rice mixed with yogurt and seasonsed with black pepper, chilies and/or mint. It is very good with spicy curries. (India)
Biryani or pillau is rice boiled with vegetables like peas, cauliflower, and potato, seasoned with curry spices including cumin, corriander, cinnamon and turmeric to make a one-dish meal. (India)
Kamameshi is rice steamed in a covered pot with quail egg, bamboo shoot, carrot, shiitake mushroom and seasoned with soy sauce, mirin and dashi. A simple one-pot meal. (Japan)
Pineapple rice is cooked with peppers & onions, pineapple and a bit of coconut or coconut milk. (Thailand)
Fried rice is cooked rice re-fried with egg and vegetables seasoned with soy sauce. (China)
Mujadara is a mixture of rice and lentils seasoned with cumin and cinnamon, then topped with crispy carmelised onions (Middle East)
Uncle Bens do a wholegrain rice that cooks in 10 minutes, and its really nice :) I'm not sure what its called but it comes in a big orange box!

I substitute a can of coconut milk for a like amount of water when cooking. Freaking amazing way to easily dress up white rice. Depending, I will add a bit of sugar too. (Don't know which side of the weight hill you are.)
