Rice Substitute

I love stir-fry, but since I started cc I eat it a lot less.  It's a really healthy meal, but limiting myself to a half-cup of rice took a lot of the joy out of it for me.  But, I think I have found the perfect rice substitute on a youtube

I hate the video, so to spare you, here is the basic recipe:

First you shred a head of cauliflower, then you stir fry it with a little oil and whatever you like in fried rice.  Any combination of scallions, carrots, peas, mushrooms, protein or eggs will make a delicious fried rice.  Then add seasoning and soy sauce.

I made a whole head of cauliflower with a chicken breast, a cup of asparagus, a red onion and two scallions for only 480 calories.  It was so much food, I am stuffed and I can't move.  Two normal people could have fed themselves on this meal, especially with a second chicken breast, and been perfectly happy.

I'll do something similar with shredded red cabbage sometimes, but usually just eat it raw as a salad.

  Stir fry is the BEST! Best way to get my veggies. Best way to fill up w/o loss of flavor, and it's the best way to get me fed full and to feed my 2 growing boys w/o bankrupting us. Thanks for the tip.

  I have seen cauli as a mashed potato. I love cauli but, Yech!

I've tried Cauliflower and other things like turnips as substitutes for mashed potatoes, but they alwasy seem water and never get that thick buttery texture I want form mashed potatoes.   But cauliflower as rice seems to work pretty well.
