Chop it all up and whack it in the oven for 1&1/2 (or more like 2) hours. Yum!!

Recipe Ingredients for Rick Stein's - Greek roast vegetables

500 g potatoes
350 g courgettes
6 garlic cloves
350 g aubergine
1 red pepper
1 green pepper
2 large tomatoes
2 red onions
30 g dill
30 g parsley
300 ml tinned tomatoe
175 ml extra virgin olive oil
1 salt
1 pepper

Recipe Directions for Rick Stein's - Greek roast vegetables

  1. Preheat oven to 190 C

  2. Slice Pots (5mm thick) and layer in a roasting tray then season

  3. Slice courgettes

  4. Slice Garlic

  5. Sprinkle courgettes and garlic over the potatoes and season

  6. Slice aubergine - 1cm thick and layer on top

  7. roughly chop red and green pepper and layer on top

  8. thickly slice onion and layer then season again with salt and pepper

  9. Roughly chop the herbs and add half of each

  10. Layer over the tomatoes - thickly sliced

  11. Add the remainder of the herbs

  12. Final season

  13. Pour over the tinned tomatoes - sieved

  14. Pour over the olive oil

  15. Cover tightly with foil and put in the oven

  16. If the vegetables give off a lot of juice pour this off towards the end of the cooking process and boil it - reducing slightly then pour back over to serve

  17. Also good cold!!
