Recipe Ingredients for Rick Stein's - Greek roast vegetables
| 500 | g potatoes |
| 350 | g courgettes |
| 6 | garlic cloves |
| 350 | g aubergine |
| 1 | red pepper |
| 1 | green pepper |
| 2 | large tomatoes |
| 2 | red onions |
| 30 | g dill |
| 30 | g parsley |
| 300 | ml tinned tomatoe |
| 175 | ml extra virgin olive oil |
| 1 | salt |
| 1 | pepper |
Recipe Directions for Rick Stein's - Greek roast vegetables
- Preheat oven to 190 C
- Slice Pots (5mm thick) and layer in a roasting tray then season
- Slice courgettes
- Slice Garlic
- Sprinkle courgettes and garlic over the potatoes and season
- Slice aubergine - 1cm thick and layer on top
- roughly chop red and green pepper and layer on top
- thickly slice onion and layer then season again with salt and pepper
- Roughly chop the herbs and add half of each
- Layer over the tomatoes - thickly sliced
- Add the remainder of the herbs
- Final season
- Pour over the tinned tomatoes - sieved
- Pour over the olive oil
- Cover tightly with foil and put in the oven
- If the vegetables give off a lot of juice pour this off towards the end of the cooking process and boil it - reducing slightly then pour back over to serve
- Also good cold!!
