As I understand it olive oil is the oil that is best.   I use it exclusively for cooking and baking (with an ocassional hint of peanut or sesame oil for chinese cooking.)  Check it out.

Olive Oil I use for most cooking but for baking I just do not like the taste. Many times I substitue Applesauce for the oil in cookies unsweetened or homemade.

Below I pasted a noteand website  about Canola Oil I use this when I need oil for baking or heavy frying it stands up better than Olive Oil.

- Canola oil is a monounsaturated oil extracted from the seeds of a plant in the mustard family. It has a mild flavor and aroma and is most commonly available in a refined form. It has a bland flavor and is recommended for deep-frying, pan-frying, sauteing, baking and preparing salad dressings. Its mild flavor and relatively high smoke point (400°F) make refined canola oil a good all-purpose oil. Of all the cooking oils, canola has the least amount of saturated fat (6%) and is the least expensive.

I use olive oil for cooking as well (not for baking or super high heat as jorwright said above, it doesn't work as well for those purposes).  You can buy a sprayable version near where they sell PAM, which works really well for just using a tiny bit - probably 10-20 calories to coat a medium pan, vs. 50-100 for 1/2-1 tbsp of oil.
