Ripe Pear v Unripe Pear

I hope this doesnt sound as daft as I think it does...

I have a pear on Monday which is not ripe. From experience it is hard and tasteless.

Come Saturday the same pear is now ripe. Juicy and sweet. Quality.

Does it have the same calorific content on monday as it does now on the Saturday?

Yes it is all the same pair.  the only thing that changes is the water content.

I actually think there are more calories in some ripe fruit than unripe friut because the sugar level changes. I know that people (e.s. diabetics) who follow a low GI diet (Glucose Index) there is a distinction between, say a ripe banana and a really ripe banana. Having said that, the actually caloric difference is more than likely minimal or at least minimal enough to ignore. Heck, we're already trying to figure out if that bowl of Special K was 31 oz or 60 oz -- the last thing we need is to have to calculate the ripeness of the fruit we eat. So I say wait for the yummy juicy and ripe pear ....

When a fruit ripens some of the starchy dry matter breaks down and turns to sugar.  So an unripe fruit is harder with less sweetness and a ripe one is softer and sweeter.  There is no more energy (calories) in the fruit, just a different ratio of starch, water and sugar.

Although I did hear once recently, I forget where, but the comparision between an unripe and really ripe banana is that the ripe one is better for you. I can't remember why, but I thought itwas interesting.  NOt sure if it applies to more than just bananas.

whfoods.org always recommends eating your fruit fully in order to get in the maximum amount of antioxidants.
