| 8 | oz yam, largely diced |
| 1 | red onion, broadly chopped |
| 4 | cloves garlic, whole but peeled |
| 1 | yellow pepper, broadly chopped |
| 3 | large mushrooms, broadly chopped |
| 2 | tbls olive oil |
| 1/2 | tbls sesame seed oil |
| 1 | pinch chili |
| 2 | oz halloumi cheese, in bits |
- Put chopped veg into oven dish.
- Drizzle with oil and chili flakes, then mix it to be sure they are coated.
- Bake at 200C for 40 minutes.
- Add halloumi cheese and bake for another 10 minutes.
- Serve.
