Roast Sweet Potato and Halloumi Recipe

Makes 1 serving


hot roasted veg and squeaky cheese. Takes an hour to prep

Ingredients
8 oz yam, largely diced
1 red onion, broadly chopped
4 cloves garlic, whole but peeled
1 yellow pepper, broadly chopped
3 large mushrooms, broadly chopped
2 tbls olive oil
1/2 tbls sesame seed oil
1 pinch chili
2 oz halloumi cheese, in bits
Directions
  1. Put chopped veg into oven dish.

  2. Drizzle with oil and chili flakes, then mix it to be sure they are coated.

  3. Bake at 200C for 40 minutes.

  4. Add halloumi cheese and bake for another 10 minutes.

  5. Serve.
