Tried Alton Brown's recipe for oven roasted broccoli last night, and it turnd out really great.  It's pretty simple, panco bread crumbs, pre-toasted for a minute or two, and toss the broccoli in with a dash of salt and pepper, and a few bits of butter (or smart balance).  wrap in foil and bake at 450 until tender - about ten minutes, maybe less.  I threw in some baby carrots for extra color and crunch, but they bake slower, so they were basically just hot baby carrots.

Lovely.  I probably ate a full cup of still nutrient rich broccoli that way, and for lunch today too.

sounds awesome.... going to try it with cauliflower too, maybe I will do a little broccoli and cauliflower together.  That would look really great!
I started throwing it on my george foreman grill and in about 4 minutes i've got grilled broccoli!  I toss it in a little olive oil with some salt and pepper and it turns out pretty darn good.

I do this will all my veggies now.  They vary in length of cooking time though, but they all turn out so good.  The carrots take about 6 minutes cut in pretty large chunks, but they turn out so sweet and delicious!

I love roasting in the oven but every recipe i've seen for roasted veggies always says it takes about 45 minutes to an hour.  I guess the foil makes a little steaming pouch for it.  Does it get browned or anything?  Cause that's what I like about roasting.
At the end of the roasting time, I crank up the oven a little and open up the foil or take off the top to get it to brown.  I love it!  Do you roast turnips like potatoes? I've never had them.  Or do you boil them?
shandykat...I love grilling veggies on the Foreman grill!  I did it alot more during the summer and harvest time than I do now but it's so quick and really tasty cooked that way!
