roasted broccoli and other vegetables!

I LOVE roasting vegetables. I'm a college student so it is perfect for me-- cheap, easy, lo-cal, and DELICIOUS!

I've recently been roasting frozen broccoli (I know fresh is better, but I have to manage). I sprinkle about 1 tbsp of olive oil on a package of frozen broccoli (5 cups) and then sprinkle it with seasonings (basil, salt, pepper, thyme, rosemary, etc.). Set oven to 425, put in for about 40-45 minutes. IT IS MY FAVORITE.

so here's my question:

Is this considered healthy?I usually eat all of the broccoli in one sitting (even though it is 5 servings, but its only about 130 calories for the broccoli, and 125 for the olive oil), but it seems like the perfect amount for me (or does this sound like a binge on brocolli?). I know it is less nutritious when roasted, but is there still some of the nutritional value of vegetables?
I have this conception that what tastes good isn't good for you.. mostly. So how would I explain this?

While it's not a good idea to eat very large portions, at least you've chosen one that is high in valuable nutrients.  By eating it with olive oil you are helping your body absorb those nutrients since some of them are oil soluable. 

It's not less nutritious when roasted.  This food is so nutrient dense that you just can't mess it up. 

Good tasting food is important!  Enjoy eating!  Things don't have to taste bad to be good for you.

However, this all needs to be balanced out with the rest of your diet.  The downside of eating large portions of any food are,
you may get tired of it,
you might not get other nutrients that are just as important,
and you'll develop the habit of eating too much - if that carries over on to higher calorie foods it wouldn't be so good, would it? 

I do suggest eating smaller portions because I know what a challenge that can be. 

I do this with veggies too.  I use it as more of a side dish.  I will roast broccoli and cauliflower , sprinkled with a little parm cheese instead of oil.  Makes it really tasty for not at many cals.  Then I will have something else to go with it to round out the meal and get some protein.  Its a great way to eat veggies though! 

Roasted Roots!

Cut unpeeled potatoes, carrots and turnips into sticks.  Put 1 TBS olive oil in a bowl.  Toss the vegetables until the oil is well distributed - just a sheen of oil on all surfaces.  Toss again with salt or other seasoning, and roast, turning during cooking.  Everything gets nice and sweet and is so good!

As a rule of thumb, most veggies only lose nutrients when you boil them in water and then drain away that water.   Some may lose them through heat, and I've heard bad rumors about microwaves, but I think if it's still a flavorful veggie, you're doing everything right!
