Roasted or mashed?

Quote  |  Reply

I went to the Whole Foods market today to pick up my fruits, veggies, and eggs.  I also picked up some Yukon golds to go with my chicken breast cutlet.  Should I roast them with olive oil or mash them with skim milk and light margarine?

I love roasting Yukons, they are so buttery and creamy that you shouldn't have to add anything besides olive oil.

Id say roast but just simply because i have an irrational fear of mashed potato o.O im paranoid its dirty lmao.. But they sound healthier roasted anyway/

How did that post twice.. :|

I had one potato (6.8 oz) roasted...and it was good too.

Will there ever be a time that I stop weighing my food?  Laughing  I only have 10-15 pounds left to lose, which I think is going to take a year, but habits are hard to break.

bec of the creaminess, i definitely vote for mashing.  easy recipe (use skim instead of heavy cream, and i say thro in a chicken/veg bullion cub if you're not sodium-phobic).  garlic mashed recipe. for roasting, i prefer to use the red potatoes or new potatoes or russets, (though any potatoes are fine, and some ppl like to use yukons or sweet potatoes or whatever).  have fun cooking!

You  can also cut them into chunks, sprinkle with a little oil and some herbs, wrap in foil and throw on the grill. Effect is similar to roasting. I think red potatoes and yukons come out better than regular potatoes do this way.

I know you don't need an answer any longer, but for future readers I think I eat more when their mashed because it never looks like a lot so I would go for roasted.

Eve's Potatoes

slice the yukon golds (use mandolin if you have one)

sautee small onion and garlic (1 tspn) in 1 tbsp of olive oil

layer potatoes in pan - - brown until sticking to pan

1/4 cup of white wine (pour in to deglaze the pan)

1 cup of chicken broth

cook covered until potatoes absorb the liquid & salt and pepper to taste....

This recipe is great....
