I roasted a pumpkin

I stuck the whole pumpkin in the oven for an hour on 400. Not the huge jack-o-lantern kind, but the kind that I think they call pumpkin pie pumpkins. Maybe the size of two softballs stacked on top of one another.


I cut it open, (which is effortless after it's cooked) and scooped out the seeds and stringy stuff ( also effortless once cooked), smushed it up in a mixing bowl with some margarine and some salt. I really enjoyed it, and the kids liked it too. Jimmy didn't like it. He said the taste wasn't bad, but the texture, which was kind of like warm applesauce, was one that he couldn't deal with.
