South Beach Diet recipe.
| 1 | tbsp peanut oil |
| 3 | garlic cloves, chopped |
| 1/4 | tsp red pepper flakes |
| 28 | ounces diced tomatoes, canned, unsalted |
| 1 | tbsp dried basil |
| 11 | ounces vegetable juice, low sodium |
| 1 | tsp salt |
| 1 | tsp pepper |
Heat oil in a medium saucepan over med-low heat. Add garlic and red pepper flakes. Stir until softened, about 3 minutes. Add tomatoes, basil and vegetable juice. Increase heat to medium and simmer for 20 minutes. Season with salt and pepper and serve hot.
