Salad Ideas for tomorrow?

My husband and I are going to my in-laws for dinner tomorrow night and I am supposed to bring a salad.  I like to cook but have never really made salads as they are kindof expensive and usually require a ton of ingredients to be really tasty.  Does anyone have any ideas of a very simple salad to make?  Dressings etc... It doesn't have to be amazing (I am not looking to impress anyone!) but would have to go with gulash (sp?) and bread.

You could try this. It can be served warm or cold.

Keep it simple!  With a dish like goulash, I'd say a classic garden salad is the way to go.  I'd choose romaine lettuce hearts, tomatoes and cucumbers, with maybe some shreds of carrot for color.  You can do a vinaigrette to be tossed at the last minute.  Prepare the salad greens the same day and place in a plastic bag with a paper towel.  Carry the cut up tomatoes and cucumbers in a separate container.

1 part wine vinegar
1 part good olive oil
1 TBS dijon mustard to each cup of dressing
1 tsp honey or sugar to each cup of dressing
salt  pepper to taste
1 garlic clove, slightly crushed

put everything into a jar or container with a tight fitting lid, shake well until thickened.  This can be made ahead and refrigerated, but allow to come to room temperature before giving a final shake.  Remove and discard the garlic before using.

You could also bring a good quality bottled dressing of your choice.

To toss, put the dressing in the bottom of the salad bowl and add the salad ingredients.  Toss from the bottom to the top until everything is well coated.

Things that my family love in salad are a few raisins or dried cranberries.  and a I love a little chopped nut   We also like to add a little cut up apple.  These all go good with any kind of dressing.   Really livens up the flavor of the salad.  You might already have some of these on hand.

black beans i am coming to fine are really good in a salad as well.
