Pasta with Salmon
| 375 | g of linguine or pasta of choice |
| 400 | g of salmon fillets |
| 500 | g asparagus, trimmed, chopped coarsely |
| 1/3 | cup finely grated lemon rind |
| 4 | cloves of garlic, crushed |
| 1 | cup of parsley |
| 1/2 | cup (125ml) lemon juice |
| 8 | green onions, sliced thinly |
| 1 | tbsp of olive oil |
- Cook pasta in large saucepan of boiling water until just tender, drain. Place in a large bowl cover to keep warm.
- Meanwhile cook salmon fillets on heated lightly oiled grill plate (or grill or barbecue) until browned (cooked as desired) and flake (remove bones).
- Boil or steam or microwave asparagus until tender and drain.
- Combine remaining ingredients in small bowl, pour over pasta and add salmon and asparagus, toss gently to combine.
