Okay so I am craving salmon patties. Does anyone have a good recipe. I was thinking of baking it instead of frying and using egg whites. But thats all I have . I dont know what to coat it with or season it with other than salt and pepper. Anyone have a good recipe?

Is that like a fishcake?  Or more like a fish burger?

You use canned salmon and the way my mom did it was to add egg and crackers and then batter them in cornmeal and fry them. I guess it would be a fishcake.

my boyfriend makes the best salmon cakes.  he chops the fresh salmon filet with a knife - not a food processor. seasons with garlic, soy sauce, slices scallions and finely diced red pepper.  binds with egg (could use just the white) and Japanese panko bread crumbs.  He coats it with the panko and crisps it up with a little oil in a cast iron skillet then finishes by baking in the oven.

Served with a cilantro and sourcream sauce.

Heavenly, this is the dish I request for  my birthday dinner.

Do you know where i can find japanese panko bread crumbs? I have never even heard of them.

I use 1 large can of salmon...  3 eggs and progresso italian bread crumbs.  They already are seasoned.  I chop up onion also and put it in.

Ball them up - spray a cookie sheet with non-stick spray and cook in oven.  they are very yummy!

We get them at a local asian market but they sell them in the ethnic food area at the local grecery store.  They are very white, dry and crispy.  You can use regular un-seasoned breadcrumbs, they work great too.  We just love the panko now that we started using them.

that sounds super easy...might need to try this after all

I use the italian bread crumb and diced onion also.  Egg whites work and sometimes I just use self rising flour instead of the bread crumbs.  You can also spray a non stick pan with Pam and cook that way.
