Salmon storage...
I live my life on the go, who doesn't these days, and I LOVE salmon for dinner. I do not have time to cook it every night. Can a large salmon filet be baked and then frozen for quick prep at dinner time?? Does anyone know? I do this with chicken breasts for use with my lunch salad and it works really well. Any suggestions?
absolutely! just don't overcook it. i would be inclined to undercook it just a little if you'll be thawing it in the microwave.

I eat salmon and I live quick food.
In less than 15 minutes (about!) I get a beautifully done fresh fillet by this method:
Place salmon in a high sided baking tray
Cover salmon in water, add 3 tablespoons of white wine vinegar and 3 of lemon juice (or add to taste)
Cover top of tray in tin foil and place it on the hob-leave until its boiling
Once boiled, allow to cool a bit with the tin foil stll on
Remove once cooled and serve! I add a sprinkling of pepper on top and sometimes a light mayo! YUM!!! Its fresh, light and TASTY!!
I cut it up raw and freeze it because I use the microwave to cook it. I can pop them in the fridge and next day theyre ready plus cooked pseudo fresh.
Totally. I agree you should not over cook it so it does'nt become rubbery when you re heat. I found using the ziplock vaccum seal bags work awsome for freshness, and you can freeze much longer than regular ziplocks.
