Salsa Anyone

Howdy All:

I have been looking for a salsa recipe to use each week. AT home so I can be sure no salt added and no sugar added. If you can help me pls do so.

I've never made salsa but I love the site www.allrecipes.com it usually if not always has a calorie count per serving and allows you to change the number of servings a recipe makes. And there are usually tons of reviews and suggestions. Good Luck

Mine is simple

6 med. roma tomatoes

2 jalapenos, 1 poblano (remove the stems)

3 Tbs minced garlic

I fill a stock pot with enough water that will allow all the tomatoes and peppers to float freely.  Bring the water to a boil and then add the peppers and tomatoes.

Let it boil for 20 minutes.  Remove the peppers and tomatoes and place in a blender.  Add 3Tbs minced garlic.  Puree to your desired thickness.

From here, I'll usually add salt to taste, but you can leave out as desired.  You can also vary the peppers if jalapenos are too spicy (or aren't spicy enough).

This makes about 6 cups.
