I make a really really good low-cal salsa.... and I went a bit overboard this long weekend. I made... well 5 full mason jars, I've managed to give away 2, and we ate one over the long weekend with Tostitos (I know, bad, but will not give in again).... so now I've got 2 more jars of salsa that I really really love, and is low-cal, but I need some suggestions for what to do with it so that I don't run out and go buy Tostitos just to use the salsa.

Suggestions please!

Salsa and Crisped Pitas, Salsa and Burgers, Salsa and Baked Potatoes, Salsa, Beans and ground Turkey to make a Chili

I love to put salsa in cottage cheese.  That's my favorite way to eat cottage cheese.

or, you could use it as a veggie dip.  I like to dip green peppers in salsa.
i like salsa with eggs
ditto tat!

also, i like it in a pita with a boca burger, cheese, and lettuce!
freshly made salsa makes a GREAT salad dressing.. i use it in place of high fat dressings.. saves calories and adds LOTS of flavor.. :)

or.. i make a salad made with chopped green and red pepper, black beans, avacados and salsa.. mixed up.. really good.. :)
I add it on top of grilled chicken.
grilled chicken and fish. Great on salmon. Also good with shrimp cocktail.
I put it in wraps with spinach, black beans, and a bit of sour cream.  yum.  Or...make burritos or tacos!  If you use low-cal tortillas they really are pretty good for you, use beans, a bit of meat, lots of veggies, etc.  :-)  we eat a lot of salsa!
Claire's Fast Chili

1 jar of salsa
2 cans of pinto beans
1 bell pepper, chopped
1 onion, chopped
ground cumin and chile powder to taste
fresh lime zest and juice
fresh cilantro

Throw everything but the lime and cilantro into a pot.  Simmer it for about 20 minutes to blend the flavors.  At the last minute stir in the zest and juice of one lime and a handful of chopped cilantro.  serve with lime wedges.
Vegetarian Chili..

Claire, I think I shall try that! MANLY style.. Enough Cumin and Chili Powder to bring tears to your eyes ;D

Nah.. not that much, but I do like things spicy! :D
Chicken Mexicana Soup

1 can chicken breast meat, drained
1 can black beans, drained
1.5 cups frozen corn
1 jar salsa (around 16oz)
1/2 TBS cumin, plus chili powder to taste
1 bell pepper, chopped
1 large can chicken broth (around 36oz)
1 clove garlic, minced
1 onion, chopped
1 tbs olive oil

Heat olive oil in large pot. Add garlic & onion & saute till onion is soft. Add chicken breast and spices (cumin & chili powder). Then add beans and rest of veggies. Stir well. Add Salsa, stirring. Slowly add chicken broth. Simmer for at least 20 min. Voila!
Hi Supersized, would you mind posting the recipe on the recipe forum for me??  I also put salsa on my eggwhite omlets - gives them a kick - anywhere you would use ketchup, you could replace with the salsa!  You could also take pita pockets - whole wheat - cut them into wedges - lightly brush with olive oil and bake them until they are crisp??  That should make it much more calorie friendly than tostitos!
Thanks everyone, I'll have to try Claire's Chilli for sure, the salsa has cilantro in it... so it should go very very well.

Also thanks for the veggie dipping tips.... seems so obvious once someone says it... but these are the things you'd never think of if you didn't ask.

Thanks again!!!
oooh, more!!

The soup sounds great, I'll veggie it but that's a damn good idea!

I'll post the recipe.. although all my cooking tends to be a bit of this and a bit of that... on the forum.
You could add some ff sourcream or yogurt, some beans, and some rice.  Sprinkle in fresh cilantro and garlic aand powdered cumin and coriander.  Add some jalepenos and any veggies you'd like and make a mexican casserole or dip.  If you're craving chips, you could  make your own healthier corn "chips" from baked corn tortillas sprayed lightly with canola no-stick spray.  I have some store-bought tortillas with 0 fat, 0 sodium and 80 calories.  They get crispy like Tostitos.  Sometimes, I'll bake two and use them to scoop up the above like a dip.  Yum!
I love salsa!  Some of my weird ways of eating it are:

Bake salmon in the oven with some salsa and lime or lemon juice.

Mix salsa in with tuna and cottage cheese for a sandwich - I often add celery or something for some crunch as well.

It sounds weird, but i dip baby carrots in salsa!  Healthier than tostitos, but still crunchy and delicious.

I've been buying cartons of red pepper black bean soup and adding some shredded cheese and salsa to spice it up.

Eat it with potatoes.  This sounds like a weird combo, but I find that I really like it.  I slice potatoes into round slices and cook them in the microwave on the baked potato setting, or roast them in the oven kind of like french fries but without the grease (you can use some oil if you want; I often don't).  Eat them with salsa instead of the usual ketchup or gravy or sour cream.

Use it on any kind of burgers instead of ketchup.

I know I must have more things I use salsa in, but that's all I can think of for now...
Weee! I was gonna say carrots and salsa! Celery works too.

I like to make my very own bowl o' stuff with what is usually leftovers: cooked couscous, beans, tuna, chopped red peppers, and salsa. I'm sure you're thinking 'umm...what?', but I like it. ^_^
I love salsa.  I put it on top of my eggs, omlets, burgers, in my salads, on top of grilled chicken breasts, in wraps, on top of zuccini, egg plant, almost everything..
Use it to make your own healthier burritos, fajitas, and tacos. I also love to make my own chips with whole wheat tortillas, which can be cut into chips and crisped in a pan with very little oil and little or no salt depeding on your tastes and health issues, much better for you than the store bought kind.

Also great on grilled chicken as a perk up for vegetable/tomato soups, a dip for fresh veggies,
*bump* for the new Salsa and...? thread
