Have a salty/crunchy craving? RECIPE INSIDE
I got this one off these same forums a while ago. There are probably plenty of people who did not see it, though, or did not try it. It's become one of my favorites (as well as my family's) so check it out.
Cauliflower Popcorn
1. Cut up the cauliflower into pieces slightly bigger than popcorn (they shrink slightly while cooking).
2. IF YOU HAVE AN OIL SPRAY: place cauliflower into a large nonstick pan and spray lightly. Turn them over and spray again. Sprinkle salt to taste.
IF YOU DO NOT HAVE AN OIL SPRAY: put the cauliflower in a large bowl and add 2 tsp of olive oil for every half head of cauliflower. Toss very thoroughly to make sure every piece is coated. Pour into non-stick pan. Sprinkle salt to taste.
3. Bake on 350 for about 40 minutes. Flip them over halfway through. Keep an eye on them near the end...they are done when they are browned, crispy, and delicious.
This is about 300 calories for an entire head, which I assure you will not be eating alone. Enjoy. :)

I also have been making this since reading of it here a while back. Plus Ive told others because its taste SO good and is relatively easy - mucho important to me! Chop, spray, broil, eat Sometimes I salt, sometimes I dont but good either way.
