Indian gravy
| 2 | cups mixed vegetables ,chopped |
| 3 | cups water |
| 1/2 | tsp tamarind pulp |
| 1/2 | tsp turmeric powder |
| 1 | tsp chili powder |
| 1 | tsp curry powder |
| 1 | tsp coriander powder |
| 1/2 | tsp mustard seeds |
| 1/2 | tsp cumin seeds |
| 1/2 | tsp olive oil |
| 1/2 | tsp clarified butter |
| 1 1/2 | cups lentils |
| 1 | tsp salt |
- pressure cook lentils with equal parts water and turmeric ,half the cumin seeds and 1/3 tsp chilipowder...until easily smashed against the back of the spoon.
- lightly fry the vegetables(carrots,zucchni,okra tomatao potato,eggplant,onion). and then bring it to aboil with tamarind pulp mixed in 3 cups of water....add the lentils and add coriander pwdr and sambar curry powder..
- temper wih mustard seeds, cumin seeds in clarified butter with a few curry leaves and a red chili added witha pinch of asefotida.
