Sandwich fillings

I got volunteered to make some finger foods for a fundraiser this weekend.  I am planning to make small finger sandwiches.  What are some ideas of some good, vegetarian sandwich fillings that are easy and not too complicated or too many ingredients, that would appeal to non-vegetarians too?  I was thinking about cucumber sandwiches, pimento cheese, and I'm drawing a blank after that.  I also thought about tofu salad (similar to egg/tuna salad?) but I've never had it so I'm not sure how much omnivores would like it. 

Cream type fillings are the best - they stick together better, and I don't want to chop up a bunch of vegetables and they will likely fall apart in such small sandwiches, anyway.  I don't think PB would be all that appealing.  Any suggestions?  Thanks!

I'm not a veggie, but I would gobble up any sandwich with hummus as a base (particularly roasted red pepper hummus).  Experimenting with an olive tampenade or baba ghanoush would probably yield good results as well.

on edit:  I had the best "mediterranean" finger sandwich the other day:  really good foccacia bread, olive tampenade, onions carmelized with balsamic vinegar, and feta cheese.

You might also consider instead of traditional sandwiches going with mini tortilla wraps or mini pita pockets.

yeah, I thought about making some pinwheels, too. Those are always a crowd pleaser.
How about scrambled egg mayonnaise with some freshly chopped chives mixed in?  Crunchy peanut butter, grated carrot and some full-fat cream cheese is a better combination than it might look on paper!  There are some lovely recipes around for mushroom pates and lentil spreads.  

Actually if you use wraps the PB&J works really well, or PB&Banana... people LOVE them and you can make it fancy by getting gourmet PB&J

Another one I use a lot is avocado, avocado & cucumber, avocado & tomato, avocado & onion sprouts....

Or instead of peanut butter, grind up your own nut butter in the food processor. You can season it the way you like. Curried cashew butter is tasty and different. But maybe too different for a fundraiser...
I like the avocado & sprouts idea, mmm.  Or the different nut butters, people might be interested in sampling them.

What about little bruschettas, have a slice of fresh mozzarella, a tomato slice, and little sprinkle of basil and a drizzle of olive oil?  You could possibly add oher things, like olives or roasted peppers

My favorite veggie sandwich is cucumbers, tomatoes and sprouts with light cream cheese that has some dill and garlic powder mixed in (sooooooo amazingly good) on whole wheat toast.  It kinda slides apart, but any one of those veggies with the garlicky dill stuff would still taste wonderful.

Easy!  Roasted red peppers, fresh mozz, basil or maybe romaine lettuce, and some balsamic vinegar.  You can also throw in some other roasted veggies.  Mmm.

 

Hummus, cucumbers, and red onions are also yum. 

I'm a big fan of the cucumber and avocado with Tofutti cream cheese and a little salsa :)  or maybe some spin on a burrito with black/refried beans, and some burrito-type toppings that will hold together.

I also had a wrap today with hummus, lettuce tomato, onion, roasted red peppers, cucumber, shredded carrots and sprouts...it was amazing...

I know you mentioned you don't want to deal with a lot of chopped veggies...but I'm sure as mentioned above anything with hummus or guacamole or something creamy as a base will be a hit and hold together well.

 

I'm with everyone else.. cucumber, tomato, avocado, hummus, light cream cheese, bell peppers, sprouts, lettuce, onions, etc... in any combo are great on sandwiches. 

I'm gonna have to disagree with a lot of the people and say to keep it as simple as possible.  The more ingredients you add the more likely people won't like it.  Most of the above I wouldn't eat and I'm pretty much a veg.  Anything with hummus, avocado and cold egg/tofu could turn off a lot of people.

I'd say make some kind of gourmet pb and j and maybe a foccacia with basil, fresh mozz and tomato and maybe a mini grilled cheese (but if it's going to be served cold this may not do that well).  You could also slice up things like zuccini, eggplant and squash (there are plenty of possible combos with sliced veggies) really thin and make a mini sandwich or wrap

xzcandizx has a point.  A lot of people might not like avo or hummus.  However, if you can handle doing a wide variety, the people that do like that sort of flavor would probably zoom in on them.  Maybe you could focus on the types of flavors you want to achieve and then pick out your ideas from above.  For example, do you want any sweeter ones like the PBJs?  What about spicy ones?  and so on.  I think cucumber and dill sauce, hummus and veggie wraps, focaccia, cream cheese with avo and sprouts all sound good.  You might even try looking at catering menus online to see if they have any tasty-sounding ideas.  If slicing veggies has you at odds, you might see if anyone you know has a mandolin.  Makes it a breeze!

It's not really slicing veggies that's a problem (I do it all the time at home) it's just I figured sliced veggie sandwichs would slide/fall apart on small finger sandwiches.  I was looking for more cream fillings that would stick together better.  But thanks for all the ideas!

Why don't you just put toothpicks through each one?  That was how I was envisioning it when I gave the suggestion.
