Scoopable Chinese Chicken Salad
Who says chicken salad needs to be loaded with creamy goo? This amazing recipe is lightly dressed and packed with fun ingredients, like broccoli cole slaw and mandarin oranges. A wonderful side dish or snack -- make a batch and munch.
One 16-oz. package (about 5 1/2 cups) broccoli cole slaw
One 8-oz. can (about 1 cup) sliced water chestnuts, drained
1 cup mandarin orange segments packed in juice, drained and chopped
1 cup chopped scallions
12 oz. cooked and chopped skinless chicken breast
3/4 cup low-fat sesame ginger dressing (like Newman's Own Lite)
In a large bowl, mix slaw, water chestnuts, orange segments, scallions, and chicken.
Top with dressing and toss to coat. Enjoy!
